Lazarakia for Lazarus Saturday
Jesus raised his friend Lazarus from the dead, and we commemorate this miracle and saint tomorrow on Lazarus Saturday.

🍞 Ingredients
6-1/3 cup (800g) of all-purpose flour
1-1/2 cups of lukewarm water
1 packet of yeast
3/4 cup of sugar
1 tsp of cinnamon
1/4 cup of olive oil
1/4 teaspoon of ground cloves (optional)
1/4 cup finely chopped walnuts (optional)
1/4 cup raisins (optional)
whole cloves or chocolate chips to decorate the eyes
✍🏽 Instructions
Mix the dry ingredients (including yeast) together and knead for 1 minute, then add oil and lukewarm water.
Knead well until the batter becomes a nice soft dough. You can now add in nuts or raisins if using. Cover and let the dough rest for about 45 minutes in a warm place.
Preheat the oven to 400°F .
Line two baking sheets with parchment paper.
To shape each of the balls into small men, roll them out into an oblong shape, create a small ball to place as the head and press on top, and form two skinny strips and place them across the body in the shape of an “x” to represent arms.
Insert 2 whole cloves or chocolate chips on the head to create the eyes. Should make 15-20 Lazarakia, depending on the size.
Place the Lazarakia on the baking sheets. Bake for 20 minutes or until the bread rolls turn golden brown. Cool before serving.
